Retro-spective is a new cooking experience for those wanting to enjoy their kitchen. This book is designed to help those wanting to upgrade their skills or maybe need confidence building in preparing, cooking and serving fabulous food.  Ken Parker welcomes you to Retro-spective, a fresh approach to working in your kitchen. Ken has 25 years experience working in first class hotels and restaurants,a food science degree,was involved in product development for Quorn and a lecturer in hospitality and food studies.It is those many recipes he has designed and the cooking methods he has developed which he is so keen to share. Ken`s inspiration comes from his time working with 70s cooking guru  Robert Carrier. Carrier was not only a great cook and prolific writer; he took the lid off the way we operate in our kitchens, de-mystifing recipes and methods, bringing spices and ingrediants from around the world, to the home cook. Ken believes there is a new wave of home cooks who having sampled the T.V.experts, media fizz and froth and are demanding something new. It is this fresh approach which he is now ready to launch and inspire a new generation.
